Apple City Grand World Champion Baby Back Ribs

Two slabs; each contains 12 bones. Our moist and flavorful ribs are sprinkled with Magic Dust dry rub and slow smoked in our pit over apple and cherry wood for 5-7 hours. We mop on two light coats of sauce right before we take them off the pit and hit them with another dash of Magic Dust. You'll notice a light pink-to-rosy cast to the meat: a result only achieved by cooking with wood. Our ribs are NOT oversmoked. Mike feels that you should taste 3-4 things when you bite into barbecue: spice {in the form of dry rub and/or sauce}, a kiss of smoke and the meat itself. Nor do they fall off the bone. Ribs should have some "pull" to them. Some meat should stick to the bone when you tear them apart. If the meat slips entirely away from the bone, then they are way overcooked.
